Recipe // Chicken & Chorizo with Quinoa 

Just like everyone else out there I’m spending January trying new recipes, attempting to eat semi-healthily and attempting to resist the lure of ordering a takeaway! One pot dishes are my jam at the minute too so this meal was a ‘chuck everything in and see’ dish which worked perfectly!

The smokiness of the chorizo complemented the chicken and the veg I added to the pot.



  • Chicken breasts x2
  • Chorizo
  • 1 red onion
  • Baby spinach – I use half a bag as it wilts so quickly
  • Quinoa
  • Passata
  • Garlic
  • Paprika
  • Mozzarella
  • Salt and pepper
  • Chicken stock

I began by frying the red onion, chicken, chorizo and seasoning in coconut oil. Once the chicken begins to brown add the spinach.

Once the spinach has wilted pour in half a cup of stock and quino and leave to reduce down to a sauce and the Quinoa to cook. When it starts to thicken add the passata.

Simmer for a further 10 minutes, make small holes in the sauce to add the Mozzarella to melt and serve.
